The Kneading Conference

One of the premier baking conferences in the country.

A one-of-a-kind event and going strong since 2007, EVENT the Kneading Conference brings together grainiacs and bread buffs from all over the country. Farmers, professional and home bakers, brewers, chefs, cooks, grain researchers, maltsters, food entrepreneurs, and wood-fired oven enthusiasts gather to educate one another about the art and science of growing and milling grains, and baking artisan breads.

The Maine Grain Alliance is thrilled to announce Don Guerra will keynote the 2023 Kneading Conference! Don Guerra uses flour and water to build connections and to make the world a better place. Guerra founded Barrio Bread in order to revive native and heritage grains and to build a sustainable grain economy in southern Arizona. Guerra unites regional farmers and millers in bringing healthy whole grains, flours, and breads to consumers, expanding the meaning of Tucson’s gastronomy. With his unique, naturally fermented breads, he promotes biodiversity and drought tolerance, and enhances the nutrition and flavor profiles of the regional food supply. Guerra has won numerous awards, including the 2022 James Beard Award for Outstanding Baker. He shares his knowledge through interactive workshops and in the classroom with school children, at Tucson Village Farm and the University of Arizona.

The conference offers dozens of workshops, panels, discussions, and field trips across several days. There are ediucational offering for bakers of all skill levels. We hope to see you there!
